Carrot Potato Fritters

Makes 4 servings of 3 fritters each

1 bread exchange, 1.5 vegetable exchange, 1/2 fat exchange, 10 optional calories.
Prep Time: 0 hour, 45 minutes
Cook Time: 0 hour, 10 minutes
Ingredients:
  • 2 cups cooked carrots
  • 12 ounces prepared instant mashed potatoes (made without fat) or leftover mashed potatoes without fat.
  • 1 cup chopped onion
  • 3 tablespoons ketchup
  • 1 teaspoon dillweed
  • 2 teaspoons vegetable oil
  • 1 garlic clove, chopped or crushed
  • salt to taste
Preparation:
1. Mash together the carrots and potatoes in a bowl and set aside.

2. Heat oil in a small skillet and brown the onion and garlic until tender, then add it to the potato/carrot mixture.

3. Stir in the ketchup and dillweed.

4. Shape into 12 patties.

5. Heat skillet and spray with cooking spray.

6. Brown the patties, turning once. Serve.
