Shrimp and Cucumber Sandwich - Low Fat

Refreshing sandwich high in protein and low in fat.

Cook Time: 0 hours, 00 minutes

Ingredients:

  • 1/2 cup cooked shrimp
  • 2 tablespoons non-fat sour cream
  • 1/2 teaspoon lemon juice
  • 1/8 teaspoon basil
  • 1 slice of whole wheat toast or 1/2 a pita
  • 6-8 cucumber slices
  • 1 green onion, sliced
  • Optional: fresh spinach greens

Preparation:

1. Combine the sour cream, lemon juice and basil.

2. Spread about 1 teaspoon of the mixture on the toast, top it with the cucumber slices.

3. Then stir the shrimp and onion into the remaining mixture and spread it over the cucumber slices.

Modifications:
Use dill instead of basil
Add some cajun seasoning salt or Old Bay Seasoning to the shrimp.
Use spinach greens as you would lettuce on the sandwich for extra nutrition.
