Amaretto and Almond Fruit Cup

An elegant dessert suitable for guests.

Makes 5 servings

Approximately 120 calories per serving.

Prep Time: 0 hours, 30 minutes

Cook Time: 0 hours, 20 minutes

Ingredients:

  • 1/4 cup sliced almonds
  • 1.5 tablespoons sugar
  • 3 fresh sliced nectarines or peaches
  • 1 medium orange, peeled and sectioned.
  • 1 fresh sliced plum or blueberries
  • 1/8 cup amaretto

Preparation:

1. Place fruit in a bowl, add amaretto and toss. Cover and chill 30 minutes while preparing and cooling the almonds (see next step).

2. Making candied almonds: Mix the almonds and sugar and cook in a nonstick skillet over low heat with constant stirring, about 20 minutes until the sugar has melted and coated the almonds. Let it cool.

3. Spoon the fruit into dishes and top with the almond mixture.

Variations: play with trying different fruits in season. Pears, peaches, blueberries, cherries, strawberries, blackberries, raspberries.
