Low-fat Bread Pudding Recipe

A great breakfast or dessert.
215 calories per serving, more if you use all sugar and not the sugar substitute.

Makes 8 servings

Ingredients:
  • 6 slices of whole wheat bread - toast them and cut into cubes.
  • Vegetable cooking spray
  • 2 eggs
  • 2 egg whites
  • 2/3 cup nonfat dry milk powder
  • 1/2 cup sugar
  • 1/2 cup granulated sugar substitute (or sugar if you wish to avoid substitutes)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 6 drops rum flavoring
  • 1 crushed banana
  • 2 cups water
Preparation:
Oven 325 degrees F.
Coat a 2-quart casserole with non-stick cooking spray.
Place bread in the casserole.
Mix the eggs, egg whites, dry milk, sugar, sugar substitute, nutmeg, cinnamon, vanilla, rum flavoring.
Add the banana to the mix.
Pour the mixture over the bread in the casserole.
For even cooking, you will want to create a water bath to cook it in. Find a pan that the casserole will fit into. Place the casserole in the larger pan, add hot water to the pan to a depth of between 1 inch and halfway up the casserole. Be careful not to overfill and have the casserole floating.
Bake 1 hour or until a knife inserted into it comes out cleanly.

Variations: Try different fruits such as peaches and raisins, berries or dates.
