Spinach Scramble Recipe

This low carb, high protein breakfast is quick to make.
Approximately 105 calories.
Makes 1 serving

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 1 cup cooked, drained and still hot chopped spinach or swiss chard.
  • Dash of nutmeg, salt, and pepper
  • 1 tablespoon onion, minced
  • 1 tablespoon sweet red pepper, chopped or green bell pepper
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • dash of tabasco, to taste
  • If desired, dash of fajita spices
  • For Indian taste, add a dash of garam masala

Preparation:

1. Cook and drain the spinach - for frozen spinach, microwave for 2-3 minutes.
2. Season the spinach with a dash of salt, pepper, and nutmeg.
3. Make the spinach into a bed on a plate to await the egg scramble.
4. Coat a nonstick skillet with cooking spray, heat, add onion and sweet red pepper, cover and cook till tender.
5. Add the eggs, salt, pepper (and tabasco if desired) and scramble them.
6. Top the spinach with the egg scramble.
7. Add more salt or pepper or tabasco to taste.
Options: for more south of the border flavor, add a dash of fajita spices to the eggs. For Indian flavor, add a dash of garam masala.

this is a tasty recipe, but the calories per serving are not correct. it would be impossible for the serving to be 105 when just the two eggs alone amount to 140, which still makes it low calorie as a meal, just not as low as stated.
