Banana French Toast Recipe

You don't have to give up hot breakfasts for health. French toast and pancakes can be healthy and light choices if you watch your portions and use good toppings.

Ingredients:
  • 4 slices whole grain bread
  • 1/2 cup skim milk
  • 4 egg whites
  • 1 banana
  • 1 tablespoon brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vanilla low-fat or non-fat yogurt
Preparation:
  • Mix the milk and egg whites and dip the bread into the mixture. Cook in a nonstick pan on medium (you can use a coating spray on the pan). Cook each side till brown.
  • Take the whole banana still in its skin and massage it until it is mushed up inside the skin. Now peel and put the mash into the hot pan, add vanilla and rum flavoring and brown sugar, heat till warm.
  • Top toast with the banana topping and a tablespoon or so of the vanilla yogurt.
