Asian Cabbage and Chicken Salad Recipe

You can make this without the chicken to use as a side dish salad, or add the chicken to make it a meal salad.

Makes 8 servings

Ingredients

1 small head of green cabbage or 1 bag of fresh shredded cabbage for cole slaw
4-6 green onions - scallions - chopped
4 tablespoons toasted sesame oil
4 tablespoons rice wine vinegar
1 packet of Equal or other artificial sweetener. If you'd rather use sugar, use 1 teaspoon sugar.
1/2 teaspoon salt
Optional toppings:
Grilled chicken - for convenience, I use prepared grilled chicken strips from the grocery deli meats section.
Toasted sesame seeds

Preparation

Toss cabbage, green onions, oil, vinegar, Equal, salt and chill at least overnight.
Before serving, add a sprinkling of toasted sesame seeds and you can top it with the grilled chicken strips.
